It is no secret that I am in love with EasyLunchBoxes and that I adore Kelly Lester along with all she has done to make eating healthy easier for the entire family. For those not familiar with Kelly, she is the guru behind the best selling lunch box system on Amazon as seen here:

We quickly fell in love with our EasyLunchBoxes and this Momma was throwing together all kinds of healthy creations that my kids just swooned over. Then it happened... I ran out of new ideas of my own and found myself searching the internet looking to see what other foodie bloggers and Pinterest users were putting in their EasyLunchBoxes. I found several yummy and healthy recipes to make on the EasyLunchBoxes Pinterest Board. Then on one of my return visits I spotted a new photo that looked just like this along with the caption, "Coming Soon..."

...and this Momma was thrilled!!! I assumed that Kelly had divulged all her healthy recipe secrets and I was sold! I HAD to have this book. Before I even opened the cover, I knew it would make the cut for my 2012 Christmas Gift Guide. Well, not only did Kelly divulge her secrets, she gathered up over 30 contributors including these popular food bloggers Marla Meridith (who did an OUTSTANDING job as the food stylist and photographer), Leslie Durso, Aviva Goldfarb and Lisa Leake who all blew me away with their incredible recipes!!! Here are a few of my favorite recipes from the book.

  • Bacon-Cheesy Whole Wheat Pita Pockets
  • Sweet Potato Apple Cheese Muffin
  • Rock & Roll Stuffed Croissants and
  • Spinach and Red Pepper Frittata:

Yum! Doesn't that look delicious? Cooking with Trader Joe's Cookbook: Easy Lunch Boxes is the essential cookbook for creating healthy foods that your children will beg for and love to eat! I love that the entire book is centered around the use of the EasyLunchBoxes Bento Sets since this is what my children prefer to carry their lunch in to school. I love that each recipe provides a Nutritional Snapshot and is even labeled to meet special dietary needs such as Vegetarian and Gluten Free meals. The graphics are a gorgeous combination of retro and modern and the variation of colors in fonts makes it easy to spot ingredient lists and nutrition content as you flip through the book. The best part is the large full color photos of each completed recipe. This made it simple for the kids and I to flip through and pick exactly what we wanted on our menu for the week. There is also a recipe index and a list of Trader Joe's locations. Please note: although this book stems from Kelly's love for Trader Joe's, it is not necessary to shop there to create these fantastic recipes.

Cooking with Trader Joe's Cookbook: Easy Lunch Boxes is the must have gift this Holiday Season and the perfect accompaniment to the EasyLunchBoxes lunch system.   15. I love this! I send my son to school with home lunch to save money. But I think he is getting tired of lunch meat sandwiches... I need to try this.
