Hello Pinterest Fanatics and Welcome to Alesea's Recipe Box. I've picked one of my favorite recipes to share with you today,
Dash of Salt
2-3 Tbsp. water
1/2 cup all-purpose flour
1/2 cup Panko Bread Crumbs
2 cups coconut flakes
1 pound medium or large shrimp, peeled and deveined
3 cups oil for frying (in a deep fryer)
First, beat your egg with 2-3 Tablespoons of Water and a Dash of Salt. In a separate bowl or plate mix together your coconut flakes and Panko. In a 3rd bowl or plate, fill with flour.
To batter, roll your shrimp in the flour and coat evenly. Hold your shrimp by the tail and dip it into the beaten egg. Then roll your shrimp in the coconut & Panko applying liberally.
Heat oil to 350 degrees F (175 degrees C) if using a deep-fryer. I love to cook everything stove top, but regardless of which method you use... Fry the shrimp in batches. Turn them once, frying for about 2 to 3 minutes, or until golden brown.
Transfer the Shrimp to a Baking Sheet or Plate lined with Paper Towels.
Serve the Coconut Shrimp with your Favorite Dipping Sauce and Enjoy!
