Long gone are my days of brainstorming, googling, searching through blog after blog and spending way too much time coming up with a weekly menu for my family. It is so wonderful being able to quickly scan through my recipe board on Pinterest. Now the hard part is narrowing down my choices. What a great problem to have.
My family loves Mexican food and there is no shortage of recipes on Pinterest. I was inspired by a couple of pins to create my own Doritos Casserole.
Meet my Cheesy Beef Doritos Casserole...
You will need:
1 lb. Ground Beef
1 can of Ranch Style Beans (Optional)
1 bag of Doritos (I use Taco Flavor)
1/2 Onion Chopped (I use Sweet Yellow Onion)
1 can of Ro-Tel
1 Packet of Taco Seasoning
1 can of Cream of Chicken
2 cups Cheddar Cheese (or more if wanted)
Serve with Salsa & Sour Cream
Preheat the Oven to 350 degrees. Then grease your Casserole Dish (I use 9 x 11 x 3) with a spritz of Pam while your Handsome Husband browns the ground beef with the onion.
I have to pause for just a moment and reminiscence on my childhood - don't you just love the 80's throwback from this Doritos bag? LOVE it!
Next drain the ground beef & return it to the pan. Then have your sweet son mix in the taco seasoning, 1/2 cup of water, can of ro-tel and cream of chicken. (Add Ranch Style Beans at this point if used). Simmer for 5 minutes.
Now it's time to layer... I basically divide everything into thirds. Starting with Doritos.
Then Meat Mixture & Cheese
Repeat & Repeat. I kinda went overboard on the cheese, ran out and threw some Monterrey Jack on top.
Cover and throw in the oven for approx. 27 minutes. Cook until cheese is bubbly.
You end up with layers of Doritos, beef and melted cheese yumminess.
Serve with Salsa and Sour Cream.
I have two more versions to share with you soon. One with Chicken and a Healthy version. I'm sure your family will love this one as much as mine did.
